Wellington Prison's new catering unit is a triumph.
As well as serving delicious fare to Government Department clients, four prisoners are gaining on-the-job training for careers in the food industry. Now others want to join them.
Thanks to the collaborative efforts of Prison Services, Assets and Property and Corrections Inmate Employment (CIE) the self-contained catering unit (an extension of the main kitchen) opened on March 3.
CIE Kitchen Instructor Ken Paterson is one of two qualified instructors working with the prisoners. He expects their number to rise to 10 in the not too distant future.
Despite the fact that most of the prisoners have no work experience and little knowledge of the skills involved, one has already achieved an NZQA Level Two National Certificate in Cookery. Now, he's working towards the Level Three National Certificate.
"This guy's efforts have been outstanding and his enthusiasm and passion is infectious," says Ken. "Others want to join because of him."
The skills taught include health and safety, food preparation, food storage, food presentation, baking, knife handling and menu design.
Regularly changed menus ensure variety for customers and opportunity for the prisoners to expand their skills.
Delicious platter options featuring freshly cut fruits, cheeses, cakes, muffins, dessert slices, pastries, gourmet sandwiches and appetising creations are available for office functions.
The unit numbers Corrections and Inland Revenue among its Government department clients. It hopes to expand its customer base soon.
"When the pressure's on, the prisoners are committed to meeting deadlines and they get a real kick out of doing so," says Ken.
"I'm reasonably confident that working in the catering unit is motivating the prisoners to make positive changes in their lives. They'll certainly leave here with skills they can put to good use."
